Might work okay for dual cells, but VGS(th) is too high for a single cell. Actually, it's kind of high even for series cells. You can do a lot better than that one in terms of RDS(on) and VGS(th).
It's better to use a protected MOSFET in a touch switch. The gate pin on a MOSFET is highly intolerant to any kind of static discharge and you're basically touching the gate pin every time you fire the atomizer. The protected ones have a TVS diode built-in between the gate and source. You can protect one externally by adding a Zener diode in the same manner.
If you specify whether you're using a single cell or series cells, I can recommend one for you. If you're limited to the package type of the one you linked, it narrows the field a good amount. The good ones are in an SO-8 package and the really good ones are in a leadless package.
